Casserole Evening - potluck
In Lucknow, the culinary landscape is traditionally divided among three distinct categories of cooks: the ‘bawarchis,’ who specialize in preparing food in large quantities; the ‘rakabdars,’ known for their expertise in small-batch gourmet dishes; and the ‘nanfus,’ who craft a variety of breads, including rotis, chapatis, naans, sheermals, kulchas, and taftans. It’s interesting to note that preparing an entire meal is typically not the work of a single cook. Instead, there are specialists for different dishes, supported by various helpers such as the ‘degshos’ who clean utensils, the ‘masalchis’ who grind spices, and the ‘mehris’ who carry the ‘khwan’ (tray) to be laid out on the ‘dastarkhwan’. In affluent households, the kitchen operations were historically overseen by an officer known as ‘daroga-e-bawarchi khana’ or ‘mohtamim’, whose seal served as a guarantee of the food’s quality.
The world of cuisine is truly expansive, and it’s a misconception to believe that a good cook excels in every dish. While a cook may be highly skilled, their repertoire will inevitably have variations in quality. For instance, someone who prepares an exceptional Shaami Kabab might not create the finest Murg Musallam. This is particularly true in Awadh, where culinary perfection is taken very seriously, and cooks are classified based on their specific skills. Consequently, it’s challenging to definitively declare any single meal as the absolute best; while one or two dishes might stand out, others would likely be superior elsewhere.
This understanding is the essence of ‘Casserole Evening.’ Our concept brings together the best dishes prepared by the most skilled home cooks. Each casserole features a signature dish from a particular home, brought to ‘The Chhat‘ or a local residence, where it is shared with guests during an evening dinner. Imagine a Casserole Evening where Rashida aapa contributes her Shaami Kebabs, Begum Almas Abdullaha cooks Lucknowi Keema-Matar and Gosht Daalcha, Saleeman Bi prepares Raan Mussalam, Nooreen makes Phirni, Nadeem Bhai brings Bun-Kababs, and so on.
On a pre-announced date (please refer our website for the schedule), ‘The Chhat’ transforms into a communal dining space. As the casseroles arrive, so do the diners, and a unique dinner experience unfolds. Guests are treated to a full-course meal and often have the opportunity to interact with the individuals who lovingly prepared the dishes.
